6-Year Old Balsamic Vinegar by Maletti

In the rich, alluvial soil of Lambrusco di Sorbara in Soliera Italy, just outside of Modena in the Emilia Romagna region, the Maletti family has been producing quality traditional balsamic vinegar (aceto balsamico tradizionale) for generations. The Maletti's produce their balsamic vinegar from the wine and grape must (unfermented, pressed grape juice and pulp before it's turned into wine) of selected Lambrusco (red) and Trebbiano (white) grape varietals. Their vinegar is aged in an accelerated yet regulated evaporation process in former wine barrels of French Allier oak. The six year vinegar has an extraordinary density, aroma and depth of flavor with a clean delicate finish. Maletti balsamic vinegar is superb on a wide range of dishes, from fresh strawberries to salad greens topped with Parmigiano Reggiano shavings to most any meat dish. 8 Year Old Belazu Balsamic Vinegar

       

Carefully produced by a small family firm in Modena, this exceptional vinegar is a blend of cooked Trebbiano grape must (unfermented grape juice) and red wine vinegar. Over time, the blend evaporates in a series of wooden casks and the natural fruit sugars in the must contribute to the viscosity and sweetness of this remarkable vinegar.

  • Make a classic salad dressing by simply adding to extra virgin olive oil. For a low-cal alternative, our balsamic vinegar works just as well on it's own.
  • Add a few drops to olive oil in a small dish for dunking some delicious country bread.
  • Our Balsamic is ideal for finishing meat dishes, adding to gravies when you want more depth or to tomato sauces when you want a richer flavour.
  • A few drops add a sublime sensation to grilled or boiled vegetables.
  • Try a tablespoonful over strawberries too – it sounds odd but it really works!
